  • 6 tomatoes, clean and scoop out seeds and drain on towels
  • 1/3 c. bread crumbs
  • 1/4 c. parsley
  • 1/3 c. oil
  • 2 Tbsp. sundried tomatoes, diced
  • 2 Tbsp. capers
  • 2 cloves garlic (less if desired), diced
  • 1/3 c. grated cheese

Directions

    Mix bread crumbs, parsley, oil, sundried tomatoes, capers, garlic and grated cheese.

    Fill hollows of tomatoes.

    Drizzle with a little oil.

    Place on cookie sheet.

    Bake at 325° until stuffing is golden brown.
