  • 1 c. spinach or tomato pasta (shells, rotelli, bow ties or elbow)
  • 3 hard-cooked eggs, chopped
  • 1/2 c. minced celery
  • 2 scallions, chopped
  • plain yogurt or low-calorie mayo
  • salt
  • 6 large ripe tomatoes

Directions

    Cook pasta until done but firm.

    Rinse and pour into bowl. Stir in eggs, celery, scallions and enough yogurt or mayo to make a creamy mixture. Season to taste with salt.
