- 1 large Vidalia onion
- 1 Tbsp. butter
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 c. herb seasoned stuffing mix
- 1/4 c. beef broth
Directions

1Place a piece of plastic wrap large enough to cover stuffed onion in a 1 1/2-quart casserole dish.

2Slice onion crosswise into 3 layers.

3Place bottom slice of onion on plastic wrap.

4Place butter in a 4-cup glass measure; microwave at High 20 seconds to melt.

5Stir in salt, pepper, stuffing mix and beef broth.

6Place a little less than 1/2 of the stuffing mixture on onion slice in casserole.

7Add center slice of onion.

8Top with most of remaining stuffing mixture, reserving 1 tablespoon.

9Top mixture with third onion slice.

10Spread remaining stuffing mixture over onion; pull up corners of plastic wrap and tie with string.

11Microwave at High 6 minutes.

12Let stand 6 to 8 minutes before serving.
