Stuffed Winter Squash

  • 2 small acorn squash (14 to 16 oz. each)
  • 1 1/2 c. chopped cooking apple
  • 1/4 c. chopped celery
  • 2 Tbsp. chopped walnuts
  • 1 Tbsp. sugar
  • 1/2 tsp. ground cinnamon
  • salt

Directions

    Cut squash in half lengthwise and remove seeds.

    Place squash halves, cut side down in a shallow baking dish.
  3. 3
    Bake at 350° for 40 to 45 minutes.

    Stir together apple, celery, walnuts, sugar and cinnamon.

    Turn squash halves cut side up.
  6. 6
    Sprinkle with salt. Spoon apple mixture into halves.

    Bake covered about 25 minutes more.
