Stuffed Yellow Squash

- 6 medium yellow squash
- 1 c. chopped onion
- 1 c. fresh tomatoes, peeled and chopped
- 1/2 c. chopped bell pepper
- 1/2 c. grated Cheddar
- 3 slices bacon, cooked and crumbled
- 1/4 tsp. each: salt and pepper
- small pats of butter
Directions

1Simmer whole squash 8 to 10 minutes until tender, but firm. Slice in half; scoop out center, leaving firm shell.

2Combine pulp and remaining ingredients except butter.

3Fill squash shells and place in greased 9 x 13-inch casserole.

4Dot with butter. Bake 20 minutes at 400°.
