  • 2 lb. or about 3 medium zucchini, cut lengthwise
  • 1/2 lb. ground beef
  • 1/2 c. mayonnaise
  • 2 Tbsp. onion or 2 tsp. dehydrated onion flakes
  • 1 small green pepper
  • 1 tsp. oregano leaves
  • 1 tsp. salt
  • 1 tsp. lemon juice
  • 1/4 tsp. pepper (black)
  • 2/3 c. Ragu sauce
  • Parmesan cheese

Directions

    Scrape out centers of zucchini, leaving 1/4-inch rim.

    Place shell in shallow baking dish.

    Coarsely chop zucchini centers, mixing with other ingredients except Ragu and cheese.

    Spoon in shells.

    Top with Ragu and Parmesan cheese.
