- 3 zucchini
- 2 tablespoons onions, minced
- 2 tablespoons garlic, minced
- 3 tablespoons butter
- 1 cup soft breadcrumbs
- 1/2 cup tomatoes, cooked
- salt and pepper
- parmesan cheese, optional
Directions

1Cook zucchini in boiling salted water 10 minutes.

2Cut in halves and scoop out centers.

3Saute Onion, Garlic and tomato for 2-3 minutes.

4Mix pulp with remaining ingredients.

5Fill zucchini.

6Bake in 350 F oven for 15 minutes.

7Top with Parmesan Cheese last 5 minutes until slightly browned.

8Serve.
