- 2 medium zucchini
- 1/2 c. chopped onion
- 1 minced clove garlic
- 4 Tbsp. butter
- 1 large tomato, peeled, seeded and chopped
- salt and pepper
- 1/2 c. soft bread crumbs
- 2 Tbsp. freshly grated Parmesan cheese
Directions

1Wash zucchini and cut in half lengthwise.

2Hollow out shells, reserving the pulp.

3Saute onion and garlic in 2 tablespoons butter until soft.

4Add chopped zucchini pulp and chopped tomato to mixture.

5It should not be too juicy.

6Fill shells with mixture, rounding the top.
