Stuffed Zucchini

Ingredients

  • 1 1/2 lb ground meat
  • 1/3 cup rice, partially cooked
  • 1 egg
  • 2 tablespoons romano cheese
  • bread crumbs
  • small onion, minced
  • salt, pepper, garlic salt to taste
  • 2 tablespoons parsley flakes
  • cooked insides of zucchini (seeds and all)
  • hollowed zucchini halves (boats)

Directions

    Cut zucchinis lengthwise.

    Scoop out centers leaving a wall around it.

    After cutting up the insides, cook them until soft in salted water.

    Drain well when done.

    Then mix together with all the above ingredients, except the boats.

    When mixed thoroughly fill the boats.

    Take a baking pan and place some spaghetti sauce in the bottom and then add the boats.

    Finally, drizzle some sauce on the top of the boats.

    Cover and bake at 350 degrees for about 1 1/2 hours.
