Stuffing Casserole

Ingredients

  • 4 c. water
  • 1 1/2 c. Minute rice
  • 1 can cream of mushroom soup (undiluted)
  • 1 box Stove Top stuffing mix
  • 1 small can drained mushrooms
  • 1 (10 oz.) pkg. frozen broccoli, thawed and drained
  • 1 (10 oz.) pkg. frozen cauliflower, thawed and drained
  • 1/2 c. each celery and onions, sauteed in 1 stick margarine
  • slices Mozzarella cheese

Directions

    Saute celery and onions.

    Set aside.

    Cook rice in the 4 cups of boiling water (per cooking instructions).

    After the 5 minute period, add stuffing mix, seasoning, soup, celery, onions, vegetables and mushrooms. Mix.

    Place in large casserole or 9 x 13-inch baking pan.

    Top with Mozzarella cheese slices (you might add cheese after baking for 15 minutes).

    Bake at 350° for 30 to 45 minutes.
