- 3 slices hard bread (1 c. bread crumbs)
- 3 Tbsp. butter
- 1 small onion (finely minced)
- 1 Tbsp. chopped parsley
- salt to taste
- pepper to taste
- 1 small egg
- 1 tsp. paprika
- 1 tsp. celery salt
- 1 tsp. onion salt
- milk, if needed
Directions

1Soak bread in cold water until soft, mash smooth, add butter, onion, parsley and a little milk.

2Mixture must be just firm enough to keep its shape.

3Stuff fish, sewing the opening.

4If a dry crumbly stuffing is preferred, omit soaking and use half cracker crumbs.

5Capers or pickles may be used in place of onions. Serve with egg sauce.
