Ingredients

  • 2 lbs ground beef, extra lean browned, drained and rinsed
  • 1 (7 ounce) sausage, double smoked chopped in bits
  • 20 large crimson mushrooms, sliced
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 28 ounces whole tomatoes, drained and rinsed
  • 6 ounces tomato paste
  • 5 ounces mrs. refros habanero salsa
  • 1 white onion, large diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 orange bell pepper, diced
  • 3 serrano peppers, diced
  • 3 habanero peppers, pressed
  • 1 12 bulbs of garlic, pressed
  • 1 tablespoon spanish paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander seed, ground
  • 1 tablespoon basil
  • 1 tablespoon oregano
  • 5 ounces red wine
  • 5 ounces beer
  • 3 beef bouillon cubes
  • 2 tablespoons honey
  • 2 tablespoons chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ground cayenne pepper
  • 1 tablespoon fresh ground black pepper
  • 1 12 cups old cheddar cheese, grated

Directions

    Brown Ground beef and Double smoked sausage in a skillet, Drain and rinse with water.

    Prepare Peppers, Mushrooms and Onions

    Place all sauces into Stockpot (large enough for all ingredients), allow to simmer

    Add vegetables, beef and sausage

    Add all spices.

    stir regularly until full simmer.

    Mix in wine and beer.

    Cover and simmer for 4-6 hours (minimum).

    Continue to stir every 30 minutes or so.

    ready to serve.

    serve with grated cheese for topping, and garlic bread for dipping.
