Ingredients

  • 1 (8 oz.) or (15 oz.) crushed pineapple, well drained and save half of juice
  • 1 pt. Cool Whip
  • 1 c. cottage cheese
  • 1 envelope Knox gelatine
  • 1/2 c. sugar
  • 1/4 c. pineapple juice (to soften Knox gelatine)
  • 1 c. shredded cheese

    Drain pineapple well.

    Put sugar and 1/2 cup pineapple juice on stove.

    Stir to dissolve sugar on low heat.

    Add softened Knox gelatine.

    Dissolve well.

    Cool and add pineapple and cottage cheese.

    Carefully fold in Cool Whip.

    Pour into bowl and sprinkle with shredded cheese.

    Keep refrigerated.
