  • ham or shoulder (from a hog, about 200 lb.)
  • 1 Tbsp. red pepper
  • 2 Tbsp. black pepper
  • 3 Tbsp. brown sugar
  • 1 1/3 c. salt

Directions

    Dampen with water the pepper, salt and sugar so it sticks to the meat when you rub it on, then put it in a large brown paper or bag.

    Tie a cloth around it and hang it up in the smokehouse.
