- 1/2 c. shortening
- 1/2 c. margarine
- 1 1/2 c. mashed potatoes
- 1 1/2 c. potato water
- 1 c. artificial sweetener
- 2 eggs, beaten
- 1 pkg. yeast
- 10 c. unbleached flour
- oil for deep frying
Directions

1Cream shortening and margarine in bowl.

2Add mashed potatoes, potato water, sweetener and egg; beat well.

3Sprinkle with yeast. Stir in gently.

4Let stand

5for 1 1/2 hours in warm place.

6Stir in flour gradually.

7Knead on floured surface until smooth.

8Let rise, covered, in warm place 5 to 6 hours or doubled in bulk. Roll out on floured surface 1/2-inch thick.

9Cut to desired size. Place on floured towel.

10Let rise in warm place 1 1/2 to 2 inches or until doubled in bulk.

11Deep fry in 375°

12oil until light brown.

13Drain on paper towels.

14Yields 50 doughnuts.
