  • 2 cups flour, all-purpose
  • 1 cup whole wheat flour
  • 1 1/2 cups sugar divided
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 23 cup vegetable shortening
  • 1/2 cup milk
  • 2 large eggs beaten
  • 2 cups apples finely chopped
  • 1/2 cup butter or margarine, melted
  • 1 1/2 teaspoons cinnamon

    Combine flours, 1 cup sugar, baking powder, salt and nutmeg.

    Cut in shortening until mixture resembles fine crumbs.

    Combine milk and eggs; gradually add to dry ingredients.

    Fold in apples.

    Fill greased muffins tins 23 full with batter.

    Bake at 350F (180C) for 20 to 25 minutes.

    Combine remaining 1/2 cup sugar and cinnamon.

    While cakes are warm, dip tops in melted butter, then in cinnamon sugar.
