- 18 lb. salt (half fine, half coarse)
- 3 oz. saltpetre
- 2 oz. saliratus
- 3 lb. sugar or 1 qt. molasses
Directions

1Boil the salt, saltpetre, saliratus and sugar or molasses. Skim.

2Let cool.

3Then pour it over the meat; the meat is to remain in pickle from 4 to 6 weeks.
