  • 2 eggs
  • 1 1/2 c. sugar, divided
  • 1 c. chopped dates
  • 1 c. coconut
  • 1 c. chopped walnuts
  • 1 tsp. vanilla extract

Directions

    Blend eggs and 1 cup sugar.

    Stir in chopped dates, coconut, walnuts and vanilla.

    Butter a 2-quart casserole dish and pour in mixture.

    Bake at 375° for 30 minutes, stirring every 10 minutes. Remove from oven and let cool until mixture can be handled.

    Roll into walnut sized balls.
  6. 6
    Roll balls in remaining sugar.
