Sumac Chicken Fillets

  • 1 tablespoon sumac
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 tablespoon turmeric
  • 1 tablespoon olive oil
  • 1/2 lemon juiced
  • 4 chicken fillets
  • 4 onions
  • salt
  • pepper

    1. Combine the sumac, cinnamon, ginger, and turmeric. In a separate bowl, mix 2/3 of the spice mixture with the olive oil and the juice of half a lemon. Slather the chicken breasts with the mixture using a pastry brush. Marinate in the fridge for at least 30 minutes.

    2. Preheat the oven to 350F

    3. Slice the onions.

    4. Heat a frying pan. Pour in a little bit of oil and add the sliced onions with the remaining spice mixture. Cook them halfway through and then remove them from the pan.

    5. In the same pan, brown the chicken fillets on both sides.

    6. Layer half of the onions in a baking dish. Place the fillets on top and cover with the remaining onions. Cover with foil and bake in the oven.
