Summer Fruit Compote

Ingredients

  • 1/2 cup light brown sugar
  • 6 whole cloves
  • 2 star anise
  • 1 cinnamon stick
  • 1 vanilla bean halved lengthwise, seeds scraped out
  • 2 granny smith apples peeled, cored and cut into wedges
  • 4 pears ripe, peeled, cored and cut into wedges
  • 12 ounces blackberries about 3 cups

Directions

    Place the brown sugar, cloves, star anise, cinnamon stick and the vanilla bean and its seeds in a large saucepan. Add 1 3/4 cups water, stir well and cook over medium heat until the sugar has dissolved.

    Stir in the apples and pears and simmer over a low heat for 5 mins. Add the blackberries and simmer for 3 mins. Remove from heat; cool for at least 3 hours before serving.
