Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup shredded carrot
  • 1/4 cup chopped green pepper
  • 2 eggs, sightly beaten
  • 1 1/2 cups soft breadcrumbs
  • 1 cup cottage cheese, drained
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • 2 lbs ground beef
  • 3/4 cup catsup
  • 1/3 cup brown sugar
  • 1 tablespoon dry mustard

Directions

    In a small saucepan cook onion, carrot and green pepper in a small amount of boiling water 5 minutes or until tender.

    Drain.

    Combine with eggs, bread crumbs, cottage cheese, salt and poultry seasoning.

    Add beef and mix well.

    Pat into a 9 x 5 loaf pan.

    Bake uncovered in 350 oven for 1 1/2 hours.

    Pour off excess liquid.

    In a saucepan combine catsup, mustard and brown sugar.

    Heat through.

    Serve meatloaf with catsup topping.
