- 2 tsp. salt
- 1 1/2 lb. tomatoes
- 2 Tbsp. chopped mint
- 1 lb. zucchini
- 1/4 c. wine vinegar
- 3/4 c. red onion, chopped
- 1/4 c. chopped parsley
Directions

1Peel, seed and chop cucumbers.

2Chop zucchini.

3Mix salt and vinegar; toss with zucchini and cucumbers.

4Let sit for 30 minutes.

5Mix remaining ingredients and add.

6Add vinegar, oil and salt and pepper to taste.
