Ingredients

  • 1/2 c. olive oil
  • 1/4 c. red wine vinegar
  • 1 tsp. sugar
  • 2 cans mandarin oranges
  • 1 (18 or 19 oz.) can chickpeas
  • 1 (19 oz.) can red kidney beans
  • 1 red onion, sliced
  • 1 green pepper, sliced in strips
  • 1 yellow pepper, sliced in strips
  • chopped parsley

Directions

    Mix all ingredients in a large bowl.

    Pour dressing over all. Toss gently.

    Let cool 1/2 hour and serve.
