  • 11 c. peeled, chopped tomatoes
  • 4 c. chopped bell peppers
  • 1 c. vinegar
  • 4 (4 oz. each) tomato paste
  • 4 c. chopped onions
  • 6 (1/2 c.) jalapenos
  • 2 Tbsp. salt
  • 1/2 Tbsp. cayenne pepper (or to taste)

Directions

    In hot water bath submerge tomatoes in boiling water to loosen skins.

    Remove and discard skins.

    Chop all vegetables into small, bite-size pieces.

    Simmer in large pot for 10 minutes.

    Put in warm jars with lids.

    Place in boiling water bath for 15 minutes.
