  • 5 lb. ground beef or deer
  • 1/4 c. Morton Tender Quick salt
  • 3 to 5 tsp. liquid smoke
  • 3 to 5 Tbsp. mustard seed
  • 3 to 5 Tbsp. coarse black pepper
  • 2 to 5 Tbsp. crushed red pepper
  • 1 tsp. garlic powder

Directions

    Mix in glass or plastic container; cover and put in refrigerator for 24 hours.

    Shape into 4 rolls and bake at 250° for 2 hours, then turn them over and bake for 2 more hours.

    Bake on a broiler pan.
