Mary'S Stuffed Peppers

  • 3/4 lb. hamburg
  • 2 eggs
  • 2 Tbsp. Romano cheese
  • 1 tsp. parsley
  • 2 cloves garlic
  • 1/8 tsp. salt
  • dash of pepper
  • 9 oz. can tomatoes
  • 4 tsp. olive oil
  • 4 slices wet bread
  • 4 large peppers

Directions

    In a large frying pan on low heat, dice garlic and brown in the olive oil.

    Pour in 1/2 can of tomatoes and simmer.

    In a large bowl, mix hamburg, eggs, cheese, parsley, salt, pepper and bread; then tomato mixture.

    Wash peppers; cut in half and remove seeds. Stuff peppers.

    Place peppers on lightly oiled baking dish.

    Bake at 325° for about 30 minutes.

    Spoon remaining tomatoes over top of peppers and bake for another 30 minutes.
