Summer Spaghetti

Ingredients

  • 3 large tomatoes, peeled, seeded and chopped
  • 1/4 c. parsley, coarsely chopped
  • few leaves basil, chopped
  • 1/4 c. freshly grated Parmesan
  • 1/3 c. Italian light olive oil
  • 2 cloves garlic, crushed
  • salt and freshly ground pepper to taste
  • 1 lb. spaghetti

    Place all the ingredients (except the spaghetti) in a bowl and mix.

    Cook spaghetti in rapidly boiling water, not until it's mush but when it's ever so slightly hard.

    Drain.

    In a large bowl mix the sauce and spaghetti (steaming hot) well.

    Put it on the table, pour a glass of wine and enjoy!
