Summer Squash

  • 2 to 2 1/2 lb. summer squash (yellow preferably)
  • 1/2 c. margarine
  • 3/4 c. chopped onion
  • 15 Ritz crackers, crumbled
  • 2 eggs, beaten
  • salt and pepper
  • 1/2 tsp. Tabasco sauce
  • 1 c. grated American cheese
  • 1 1/2 c. Ritz cracker crumbs
  • 1 1/2 c. margarine, melted

Directions

    Slice squash and cook until tender.

    Saute onion in 1/2 cup margarine and mix with squash.

    Add 15 crumbled crackers, eggs, seasonings and cheese.

    Place mixture in a 2-quart casserole.
