- 2 lb. fresh squash
- 5 Tbsp. butter
- 2 eggs
- 1/3 c. milk
- 1 small can chopped green chilies
- 1 large onion
- salt and pepper to taste
- 1 Tbsp. flour
- 1 c. grated Cheddar cheese
Directions

1Wash and cut up the squash.

2Dice the onion and add to squash. Cook all in boiling salted water.

3Drain and mash with potato masher.

4Add about 3 tablespoons butter with salt and pepper to taste.

5Beat eggs.

6Stir a little hot squash into eggs before gradually adding eggs to squash.

7Mix in flour, milk and last 2 tablespoons butter.
