Summer Squash Bake

Ingredients

  • 2 lb. fresh squash
  • 5 Tbsp. butter
  • 2 eggs
  • 1/3 c. milk
  • 1 small can chopped green chilies
  • 1 large onion
  • salt and pepper to taste
  • 1 Tbsp. flour
  • 1 c. grated Cheddar cheese

Directions

    Wash and cut up the squash.

    Dice the onion and add to squash. Cook all in boiling salted water.

    Drain and mash with potato masher.
  4. 4
    Add about 3 tablespoons butter with salt and pepper to taste.

    Beat eggs.

    Stir a little hot squash into eggs before gradually adding eggs to squash.

    Mix in flour, milk and last 2 tablespoons butter.
