Summer Squash Casserole

- 3 lb. summer squash
- 1/2 c. chopped onion
- 1/2 c. cracker crumbs
- 2 eggs
- 1 stick butter
- 1 Tbsp. sugar
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

1Cube squash and boil until tender.

2Drain and mash. Add all ingredients together except half of the butter to the squash. Melt remaining butter. Pour mixture into baking dish and pour melted butter over top.

3Sprinkle with additional cracker crumbs until covered. Bake at 375° for 40 minutes.

4Half recipe is plenty for 4 people.
