Summer Squash Casserole

Ingredients

  • 3 lb. summer squash
  • 1/2 c. chopped onion
  • 1/2 c. cracker crumbs
  • 2 eggs
  • 1 stick butter
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

    Cube squash and boil until tender.

    Drain and mash. Add all ingredients together except half of the butter to the squash. Melt remaining butter. Pour mixture into baking dish and pour melted butter over top.

    Sprinkle with additional cracker crumbs until covered. Bake at 375° for 40 minutes.

    Half recipe is plenty for 4 people.
