- 4 medium summer squash, sliced
- 1 medium onion, chopped
- 1 c. grated Cheddar cheese
- 2 c. crushed saltine crackers
- 1/2 stick melted butter
- salt and pepper to taste
Directions

1Cook squash and onions until slightly tender; drain.

2In casserole dish, alternate squash and cheese.

3Cover with cracker crumbs.

4Sprinkle melted butter over crumbs.

5Bake at 350° for 30 minutes or until golden and squash is bubbly.

6Serves 4 to 6 people.
