Summer Squash Casserole

  • 2 lb. summer squash
  • 1 carrot, grated
  • 1 onion, chopped
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 1 stick butter
  • 1 pkg. cornbread stuffing

Directions

    Cook, drain and mash squash. Mix butter with cornbread stuffing. Mix squash, carrot, onion, sour cream, soup and 1/2 the stuffing. Place into a baking dish and cover with remaining stuffing. Bake at 375° for 25 to 30 minutes.
