Ingredients

  • 3/4 c. shredded sharp Cheddar cheese
  • 3/4 c. shredded Monterey Jack cheese
  • 4 slices bacon
  • 6 oz. lean sausage
  • 1/4 c. diced onion
  • 5-6 mushrooms, sliced
  • 1 pkg. (8-10 oz.) fresh spinach or 1 pkg frozen spinach
  • 1 Tbsp. flour
  • 4 eggs
  • 1/2 c. milk
  • salt, pepper, nutmeg to taste
  • 1 Pillsbury refrigerated pie crust

Directions

    Saute sausage and drain on paper towel.

    Saute bacon, drain and crumble.

    Saute mushrooms and onion.

    Microwave spinach on high 4 to 6 minutes, drain well and chop.

    Add 1 Tbsp. flour.

    Mix all ingredients in large bowl.

    Pour into pie crust.

    Bake at 400° for 15 minutes.

    Reduce heat to 350° and bake additional 15 minutes.
