- 2 lb. mixed summer squash (yellow crookneck, zucchini), sliced thin
- 2 Tbsp. chopped bell pepper
- 1 small tomato, sliced
- 1 small onion, sliced
- 1/4 c. butter or margarine
- Seasoned salt, pepper and Italian herbs to taste
- Grated Mozzarella cheese
Directions

1Saute vegetables in butter for 3 minutes.

2Add seasonings, cover and simmer until tender.

3Remove lid from sauce pan, sprinkle with cheese, return lid and turn off heat.

4Allow cheese to melt.

5Makes 6 servings.
