Summer Squash Medley

  • 3 c. zucchini, yellow squash or other summer soft squash, cut into thin circles (1/8-inch thick)
  • 1 c. chopped fresh tomato
  • 1/2 c. onion, cut into rings
  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh chopped oregano or 3/4 Tbsp. dry oregano
  • 2 cloves garlic, crushed

    Prepare ingredients.

    Place in large bowl and mix well.

    Spoon into heavy-duty foil.

    Wrap up foil completely on all sides so liquid does not escape from bottom or sides.

    Cook on low heat on barbecue grill for about 30 minutes, checking liquid content occasionally.

    Add water to keep bottom from burning.

    Be careful of steam build up.
