Summer Squash Medley

- 6 c. cut up squash (yellow, acorn, etc.)
- 1/4 c. chopped onions
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 c. shredded carrots
- 1/2 c. melted margarine
- 1 (8 oz.) pkg. Pepperidge Farm seasoned stuffing mix
Directions

1Boil squash and onions in salted water for 5 to 10 minutes. Drain and set aside.

2Combine soup, sour cream and carrots.

3Fold in squash; set aside.

4Mix margarine and stuffing.

5Put 1/2 stuffing mixture on top of squash.

6Bake at 350° for 25 to 30 minutes.

7Can be made ahead and baked later.
