Summer Squash Medley

Ingredients

  • 6 c. cut up squash (yellow, acorn, etc.)
  • 1/4 c. chopped onions
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. shredded carrots
  • 1/2 c. melted margarine
  • 1 (8 oz.) pkg. Pepperidge Farm seasoned stuffing mix

Directions

    Boil squash and onions in salted water for 5 to 10 minutes. Drain and set aside.

    Combine soup, sour cream and carrots.

    Fold in squash; set aside.

    Mix margarine and stuffing.

    Put 1/2 stuffing mixture on top of squash.

    Bake at 350° for 25 to 30 minutes.

    Can be made ahead and baked later.
