  • 2 cups heavy cream
  • 8 sprigs Tarragon
  • 2 tablespoons Butter
  • 4 cups Fresh Corn Kernals
  • 2 Zucchini finely diced
  • 2 cups Cherry Tomatoes halved
  • 1/2 Fresh Lemon Juice

Directions

    Over medium low heat combine cream and 3 tarragon sprigs. Bring to simmer and cook about 3min . Remove from heat and discard sprigs.

    Heat butter in large saute pan. Add corn and cook 1min. Stir in zucchini and saute 1min. Stir in tomatoes and cream sauce. Season with salt and pepper and cook 3-4 min. Remove from heat, add lemon juice and remaining chopped tarragon.
