  • 1 recipe pie crust
  • 1 c. heavy cream
  • 2 large eggs
  • 2 tsp. fresh thyme leaves
  • 1 clove garlic, minced
  • 1/2 c. Swiss cheese, grated
  • 1/2 c. Cheddar cheese, grated
  • salt and pepper
  • 2 1/2 lb. fresh tomatoes, peeled and cored
