Summertime Squash Casserole

- 3 lb. fresh summer squash
- 1/2 c. onion, chopped
- 1/2 c. chopped bell pepper
- 2 eggs
- 1 can cream of mushroom soup
- 6 slices bacon, fried and crumbled
- 9 salted crackers, crushed
- salt and pepper to taste
- 1 tsp. garlic powder
- 1 c. grated sharp Cheddar cheese
Directions

1Wash, cut and boil squash until tender.

2In a mixing bowl, combine onion, bell pepper, eggs, soup, bacon, crackers, salt, pepper, garlic powder and cheese.

3Drain squash and add to the mixture and stir.

4Pour into a buttered casserole dish.

5Bake at 375°, uncovered, for 45 to 60 minutes, until brown.
