Summertime Squash Casserole

  • 3 lb. fresh summer squash
  • 1/2 c. onion, chopped
  • 1/2 c. chopped bell pepper
  • 2 eggs
  • 1 can cream of mushroom soup
  • 6 slices bacon, fried and crumbled
  • 9 salted crackers, crushed
  • salt and pepper to taste
  • 1 tsp. garlic powder
  • 1 c. grated sharp Cheddar cheese

Directions

    Wash, cut and boil squash until tender.

    In a mixing bowl, combine onion, bell pepper, eggs, soup, bacon, crackers, salt, pepper, garlic powder and cheese.

    Drain squash and add to the mixture and stir.

    Pour into a buttered casserole dish.

    Bake at 375°, uncovered, for 45 to 60 minutes, until brown.
