Ingredients

  • 6 beaten eggs or egg substitute (1 1/4 cups)
  • 1 1/2 c. Dari-Mate
  • 1 1/2 tsp. oregano
  • 1 tsp. minced garlic
  • 1/2 tsp. salt
  • 4 c. frozen hash browns
  • 1 (16 oz.) pkg. frozen chopped broccoli, thawed and drained
  • 1/4 c. imitation bacon bits
  • 1/2 c. chopped onion
  • 1 1/2 c. (6 oz.) shredded Cheddar
  • 1/4 c. bread crumbs
  • 1/4 tsp. pepper

Directions

    Preheat oven to 350°.

    In a large bowl combine eggs, Dari-Mate, oregano, garlic, salt and pepper.

    Add potatoes, broccoli, bacon bits, onion and cheese.

    Pour into Pam sprayed 13 x 9 x 2-inch pan.

    Sprinkle with bread crumbs.

    Bake 30 minutes or until bubbly.

    If refrigerated (pre-made) bake at 375°.
