  • 1 pkg. lemon jello
  • 1 c. boiling water
  • 1 c. pineapple juice
  • 1/2 tsp. salt
  • 1 c. crushed pineapple, drained
  • 1 c. grated carrot

Directions

    Dissolve jello in boiling water.

    Add pineapple juice and salt.

    Chill.

    When slightly thickened, add pineapple and carrots. Chill in refrigerator until firm.

    Cut into individual servings and place on lettuce.

    May be served with a teaspoon of salad dressing on the side.
