- 2 to 3 tsp. curry powder
- 1 1/4 tsp. salt (optional)
- 1/4 tsp. pepper
- 6 chicken breast halves, boned and skinned
- 1 1/2 c. orange juice
- 1 c. rice
- 3/4 c. water
- 1 Tbsp. brown sugar
- 1 tsp. dry mustard
- chopped parsley
Directions

1Combine curry powder, 1/2 teaspoon salt and pepper.

2Sprinkle over chicken.

3Rub seasonings onto top and bottom surfaces of each chicken piece and set aside.

4In 10-inch skillet, combine orange juice, rice, water, brown sugar, mustard and remaining 3/4 teaspoon salt.

5Mix well.

6Arrange chicken pieces over rice. Bring to a boil.

7Cover and simmer 20 minutes.

8Remove from heat and let stand, covered, until liquid is absorbed, about 5 minutes. Sprinkle with parsley.

9Makes 6 servings with 281 calories per serving.
