Super Bowl: Tomato Salsa

  • 2 Jalapenos [stemmed and seeded]
  • 1/2 cup Cherry Tomatoes [halved]
  • 1/2 onion [quartered]
  • 1 can Peeled tomatoes whole [28 ounce] {save juice}
  • 2 cloves Garlic
  • 1/2 Lime [juiced]
  • 1/2 cup Cilantro [stems discarded]
  • 1/4 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

    1. Preheat oven to 400.

    2. Toss jalapenos, cherry tomatoes and onion with oil. Place on cooking pan roast until brown and slightly charred, about 15 minutes. Let cool.

    3. In a blender , combine roasted vegetables, whole peeled tomatoes, garlic, lime juice, cilantro, cumin, salt, and pepper. Pulse to chop and combine, making sure not to over mix. After 4- 8 pulses check it.
