Super Easy Enchiladas

Ingredients
- 4 tortillas (We use corn or Sandwich Petals, as we eat gluten free)
- 1 lb ground beef, cooked and drained
- 1 (16 ounce) jar salsa, choose your heat
- 1 (8 ounce) bag monterey jack cheese or 1 (8 ounce) bag cheddar cheese or 1 (8 ounce) bag mexican cheese
Directions

1Preheat oven to 350 degrees F and spray 8x8 pan with cooking oil.

2Brown and drain ground beef.

3Pour 1/2 jar of salsa into beef and warm through.

4Warm tortillas in microwave or in skillet on stove.

5Fill tortillas with meat/salsa mixture and fold tightly.

6Place in baking pan side by side.
-
7Pour remaining salsa over enchiladas and spread to cover.

8Sprinkle with cheese.

9Bake in preheated oven for 20 minutes, covered, then uncover and bake an additional 10 minutes.

10Serve with sour cream or refried beans.
