- 2 Tbsp. flour
- 1 1/2 tsp. salt
- dash of pepper
- 2 Tbsp. water
- 1 pt. oysters
- 1 qt. milk, scalded
Directions

1Blend first four items to smooth paste and stir in oysters and their liquor.

2(Flour is one secret of stew's perfection.)

3Simmer oysters over very low heat until edges curl.

4Pour into scalded milk by pouring into bowl of spoon to prevent splashing.

5Remove pan from heat; cover and let stand 15 minutes.

6(This improves flavor.)

7Have tureen and soup bowls hot; add pats of butter or margarine.

8Reheat stew briefly until hot and serve.

9Serves 4.
