Super Stuffed Potatoes

  • 4 large baking potatoes
  • 16 oz. low-fat cottage cheese
  • 1 c. diced ham
  • 1 c. shredded Cheddar cheese
  • 1/2 c. chopped green onions
  • 1/2 tsp. salt
  • 1/8 tsp. freshly ground pepper

Directions

    Prick potatoes all over with fork. Arrange in microwavable dish; microwave on High for 15 to 18 minutes, turning halfway through until tender. Preheat oven to 400°. Halve potatoes and scoop out insides, leaving 1/4 inch shell.

    Mash cooked potato with cottage cheese in bowl. Stir in ham, Cheddar cheese, onions, salt and pepper. Spoon into shells. Bake 20 minutes at 400°.
