Supper In A Pumpkin

Ingredients
- 1 pumpkin (approximately 8 c. capacity)
- salt, pepper and nutmeg
- 1 lb. sausage
- 2 medium onions, sliced
- 1/4 tsp. pepper
- 1/2 tsp. dried rosemary
- 1 tsp. salt
- 1 pkg. each: frozen lima beans and frozen corn
- 3 c. chicken broth
- 1 c. uncooked rice
Directions

1Cut top off pumpkin; set top aside.

2Scoop inside of pumpkin to remove seeds; leave sides intact.

3Season inside with salt, pepper and nutmeg.

4Crumble sausage into skillet with onions; saute until lightly browned.

5Add pepper and rosemary.

6Stir in all other ingredients and fill pumpkin.

7Cook just top of pumpkin with foil.

8Place pumpkin on rack in roasting pan with 1-inch water in pan.

9Cover all with foil; seal tight and steam at 300° for 3 hours.

10Add pumpkin top to bake last hour only to keep it from shrinking.

11Set on pumpkin to serve.
