- 1 cup butter or 1 cup margarine
- 12 cup honey
- 12 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla, gluten free
- 1 12 teaspoons baking powder
- 14 teaspoon baking soda
- 14 teaspoon salt
- 1 tablespoon cinnamon
- 2 cups Bob's Red Mill gluten-free all-purpose baking flour
- 2 cups zucchini, grated and unpeeled
- 1 cup sweetened flaked coconut
- 1 cup walnuts, chopped
- 1 cup chocolate chips (semi sweet)
Directions

1Preheat oven to 350 degrees.

2Cream butter with brown sugar and honey.

3Add the eggs and then the vanilla.

4Mix well.

5Combine all the dry ingredients together in a bowl, stir into batter.

6Stir in the zucchini, coconut, walnuts and chocolate chips.

7Grease a 12 x 9 pan, pour in batter and bake 35 0 45 minutes.
