  • 1 cup butter or 1 cup margarine
  • 12 cup honey
  • 12 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla, gluten free
  • 1 12 teaspoons baking powder
  • 14 teaspoon baking soda
  • 14 teaspoon salt
  • 1 tablespoon cinnamon
  • 2 cups Bob's Red Mill gluten-free all-purpose baking flour
  • 2 cups zucchini, grated and unpeeled
  • 1 cup sweetened flaked coconut
  • 1 cup walnuts, chopped
  • 1 cup chocolate chips (semi sweet)

Directions

    Preheat oven to 350 degrees.

    Cream butter with brown sugar and honey.

    Add the eggs and then the vanilla.

    Mix well.

    Combine all the dry ingredients together in a bowl, stir into batter.

    Stir in the zucchini, coconut, walnuts and chocolate chips.

    Grease a 12 x 9 pan, pour in batter and bake 35 0 45 minutes.
