- 1 c. milk
- 7/8 c. unsifted flour (1 c. minus 2 Tbsp. flour)
- 1 Tbsp. cooking oil
- 1/2 tsp. salt
- 2 eggs
Directions

1Combine milk, flour, oil and salt.

2Beat with electric beater on high 1 minute.

3Add eggs, one at a time, beating 20 seconds after adding each egg.

4Grease well 8 (5 ounce) muffin cups or 8 (5 ounce) custard cups.

5Fill cups 2/3 full.

6Set in cold oven.

7Turn heat to 425°.

8Bake 35 minutes or until puffed and brown.

9Do not open the oven before the 35 minutes are up!

10Remove from the oven and let stand a few minutes, then remove from cups.

11These can be frozen once made.

12To reheat, unwrap and place in a preheated 375° oven.

13Heat 5 to 8 minutes.

14Makes 8 popovers.
