- 2 c. flour
- 1/4 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1 egg
- 1 c. milk
- 1/4 c. vegetable oil
- jelly of your choice
Directions

1Stir together in a bowl the flour, sugar, baking powder and salt.

2Make a well in center of the flour mixture.

3In another bowl, beat eggs; stir in milk and oil.

4Pour egg mixture into flour mixture. Stir just until flour is moistened.

5Batter will be slightly lumpy. Do not overmix.

6Fill muffin cups 1/2 full of batter.

7Drop a little jelly in center of batter.

8Add more batter to fill muffin cups 2/3 full. Bake at 400° for 20 to 25 minutes or until golden brown.

9Makes 12 muffins.
